Kimchi and Smoked Pork Eggroll
A fun take on the classic eggroll. Here we have taken pork butt that I smoked on the ugly drum smoker and married it with some shredded kimchi. The dipping sauce is a simple combination of Sriracha, mustard and good old Vermont maple syrup. The sauce reminds me of both the old yellow mustard packets you get from Chinese takeout and an adult honey-mustard sauce.
I like to keep my rubs real simple. I like to enhance the flavor not mask it. I used a simple blend of black pepper, salt and a bit of cayenne.
Smoke time was 4 hours at 250F in my Ugly Drum Smoker (we like to call it our not so ugly drum smoker (nsuds for short)) and finished wrapped in a 250F oven for another 3 hours.
